
Easy Homemade Latkes
One of best parts about having a Jewish husband is getting to celebrate Hanukkah and making all the latkes.
I would eat these regardless of the holiday, but it has become a tradition in our home and it just adds more to the holiday spirit.
No matter what holiday you celebrate, I suggest you try these easy homemade latkes, also known as potato pancakes. They are made with simple ingredients and fun for your little ones to help with as well.

Ingredients
- 1 small onion shredded
- 1 bag (20 oz) of Simply Shredded Hash Browns
- 1 large egg
- 1/2 tsp salt
- 1/2 tsp pepper or to taste
- 1/2 cup corn oil for frying

Directions
- Mix potatoes and onion. Add in the egg, salt and pepper. Mix everything well and set the batter aside while corn oil heats up.
- Add corn oil to a large skillet and heat it over medium-high heat. Scoop about 1/4 cup of the mixture onto a flat spatula and flatten to form a patty. Transfer about four patties to skillet. Cook about 4 to 5 minutes per side, or until golden brown. Adjust heat if necessary. Repeat with remaining latkes.
- Transfer cooked latkes to a paper-towel lined plate.
- Serve with sour cream and applesauce.
