Easy Homemade Latkes
These potato pancakes are made with simple ingredients and fun for your little ones to help with as well.

- 1 small yellow onion
- 1 20z bag of Simply Shredded Hash Browns
- 1 large egg
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup corn oil
Mix potatoes and onion. Add in the egg, salt and pepper. Mix everything well and set the batter aside while corn oil heats up.
Add corn oil to a large skillet and heat it over medium-high heat. Scoop about 1/4 cup of the mixture onto a flat spatula and flatten to form a patty. Transfer about four patties to the skillet. Cook about 4 to 5 minutes per side, or until golden brown. Adjust heat if necessary.
Transfer cooked latkes to a paper-towel lined plate.
Serve with sour cream and applesauce.
