These Smash Dumpling Burgers have all the flavors of a pork dumpling, including garlic, green onions, cilantro, chili sauce, and a delicious soy dipping sauce. The crunchy cabbage slaw adds freshness, while the toasted burger buns make them easy to serve for dinner.
I found the recipe for Smash Dumpling Tacos from The Wooden Skillet, but instead of serving the pork patties on tortillas, I turned them into burgers.

Smash Dumpling Burger Ingredients
Dipping Sauce
- ½ cup soy sauce
- 2 tablespoons green onions, thinly sliced
- 4 teaspoons minced garlic
- 4 teaspoons rice vinegar
- 4 teaspoons honey
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1 teaspoon garlic chili sauce
- Red pepper flakes, optional
Cabbage Slaw
- ½ cup green cabbage, thinly sliced
- ½ cup matchstick carrots
- ¼ cup fresh cilantro, chopped
- ¼ cup green onions, sliced
Pork Burger Mixture
- 1 pound ground pork
- ¼ cup green onions, minced
- 1 tablespoon fresh cilantro, minced
- 2 teaspoons minced garlic
- 1 teaspoon garlic chili sauce
- ½ teaspoon kosher salt
- ⅛ teaspoon ground black pepper
- 1 tablespoon extra virgin olive oil, for cooking
For Serving
- 6 hamburger buns
- Spicy mayo, optional
- Sesame seeds, optional
How to Make Smash Dumpling Burgers
Prepare the Dipping Sauce
Add the soy sauce, green onions, garlic, rice vinegar, honey, ginger, sesame oil, and garlic chili sauce to a small bowl.
Whisk everything together and add red pepper flakes for additional heat, if desired. Set the sauce aside while you prepare the burgers.

Make the Cabbage Slaw
Add the sliced cabbage, matchstick carrots, cilantro, and green onions to a mixing bowl.
Toss everything together until evenly combined. You can leave the slaw as is or add a small spoonful of the dipping sauce for extra flavor.

Prepare the Pork Burgers
Add the ground pork, green onions, cilantro, garlic, garlic chili sauce, kosher salt, and black pepper to a large bowl.
Mix gently until the ingredients are evenly combined. Divide the pork mixture into six equal portions and shape each portion into a ball.

Cook the Burgers
Heat a large skillet or flat-top griddle over medium-high heat. Add the olive oil and spread it around the cooking surface.
Place the pork balls onto the hot skillet. Place a square of parchment paper over each one and press firmly with a burger press or sturdy spatula to create thin patties.
Cook for about 40 seconds on the first side. Flip the burgers and continue cooking until the pork is fully cooked and reaches an internal temperature of 160°F.
Toast the hamburger buns on the skillet for a minute or two until lightly golden.
Assemble the Smash Dumpling Burgers
Place one pork patty on the bottom half of each toasted bun.
Top with the cabbage slaw, spicy mayo, and sesame seeds. Add the top bun and serve each burger with a small bowl of dipping sauce.
You can drizzle the sauce directly onto the burger, but I loved serving it on the side for dipping.

Easy Substitutions
Ground chicken or ground turkey can be used in place of the pork. You can also substitute tamari for the soy sauce to make the sauce gluten-free.
For even more crunch, add thinly sliced cucumbers or pickled vegetables.
