During our stay in the Adirondacks last week, we discovered that our AirBnB had blueberry picking on their farm.
Our hosts invited us to pick blueberries since no one else was going to and they were literally ready to burst!
I love eating blueberries on their own, but one of my favorite combinations is blueberry and lemon. Who doesn’t love that combo in the summer?
I couldn’t wait to go home and and make lemon blueberry waffles. The ingredients are simple and I knew I had everything on hand.
These blueberry lemon pancakes provide a delicious balance of tart and sweetness with a burst of blueberry flavor. The decadent lemon glaze adds the perfect touch to a mouthful of blueberries!
Ingredients for the Waffles
- Pancake mix (any ingredients the pancake mix call for)
- 3 tbs lemon juice
- 1 tsp cake batter extract
- 1 cup fresh blueberries
Ingredients for the Lemon Glaze Syrup
- 1 cup powdered sugar
- 1 tbs milk
- 1 tbs lemon juice
Directions
- Prepare pancake mix according to box directions.
- Once fully mixed, add lemon juice and cake batter extract.
- Slowly fold in blueberries and mix.
- Heat waffle iron to 375 degrees F and cook waffles.
- In a small bowl mix powdered sugar, milk and lemon juice.
- Stir until fully smooth.
- Once waffles are made, drizzle lemon glaze over them and top with fresh blueberries.
They say the best things life are free. When you discover some blueberry bushes when you least expect it, I say that is pretty awesome thing.
