Spring break is coming which means busy days! I am happy to have found baked oatmeal on TikTok. I enjoy recipes where you cook ahead and have it for the rest of the week. That’s why baked oatmeal caught my attention.

I took my own spin on this baked oatmeal; it is great to have as breakfast or snack. Even better, it is kid approved!

Baked oatmeal with Cinnamon Toast Crunch

Cinnamon Toast Crunch baked oatmeal has the perfect amount of sweetness and nutrients to satisfy all of your cravings. Check out the recipe below!

Enlarged oats with Cinnamon Toast Crunch

Ingredients

  • 2 bananas
  • 1/4 cup almond butter (or butter of your choice)
  • 1 1/3 cup almond milk (or milk of your choice)
  • 1/4 cup maple syrup
  • 2 cups oats (I used Organic Rolled Oats with Ancient Grains & Seeds from Trader Joe’s)
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/4 cup white chocolate chips (optional)
  • Dash of salt
  • 1/3 cup raisins (optional)
  • 1/2 cup Cinnamon Toast Crunch
Make ahead meal

Directions

  • Set the oven to 400 F.
  • Mash bananas in a large bowl.
  • Add the nut butter, almond milk, maple syrup, and vanilla extract. Mix together.
  • Add oats, baking powder, cinnamon and salt.
  • Fold in raisins.
  • Pour mixture into baking dish.
  • Spread evenly and top with Cinnamon Toast Crunch and white chocolate chips.
  • Bake for 25 minutes.
  • Cool, cut and enjoy!

  • 2 tsp cinnamon
  • 1/4 cup 1/4 cup white chocolate chips (optional)
  • Dash salt
  • 1/3 cup 1/3 cup raisins (optional)
  • 1/2 cup Cinnamon Toast Crunch

Instructions
