There are some recipes that make it into the weekly rotation for a month or two, and then there are the ones that somehow become part of your life forever. These California avocado chicken sliders are one of those recipes for me.
I first found this recipe from I Wash You Dry and they instantly became a staple in our house. They are easy enough for a busy weeknight, but somehow still feel like something you would order at a restaurant. And every single time I make them for family or friends, people ask for the recipe.
The combination of juicy chicken, creamy avocado, melty cheese, crispy bacon, and soft slider buns just works. It feels fresh, filling, and comforting all at once.

Why These Chicken Sliders Are So Good
What I love most about this recipe is how balanced it is. The avocado gives it that creamy California-style flavor, while the bacon and chicken make it hearty enough to actually feel like a meal.
It is also one of those recipes that looks impressive without requiring a ton of effort. That is honestly my favorite kind of cooking lately.
These sliders are perfect for:
- Easy weeknight dinners
- Summer cookouts
- Game day food
- Family gatherings
- Casual entertaining
- Meal prep lunches
And if you have picky eaters, these are usually a safe bet.
This is one of my favorite recipes to keep in rotation, and I make it even easier by baking the chicken mixture instead of cooking it on the stovetop. You still get all the same flavor, just with less effort and easier cleanup.
Ingredients
- 1 medium onion, diced
- 1 tbsp olive oil
- 1 tbsp brown sugar
- 1 tsp balsamic vinegar
- 1 lb ground chicken
- 1 egg, lightly beaten
- 1/3 cup breadcrumbs (plus more if needed)
- 2 tbsp freshly chopped parsley (or 1 tbsp dried)
- 1 tsp minced garlic
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 large California avocado, sliced
- 5 strips thick cut bacon, cooked crisp
- 5 slices white sharp cheddar cheese (1 oz each), cut into quarters
- 10 soft rolls (Hawaiian rolls work great)
Instructions
Step 1: Caramelize the Onions
Heat the olive oil in a pan over medium heat and add the diced onion. Stir occasionally and let the onions soften and turn golden brown, about 5 minutes.
Add the brown sugar and balsamic vinegar and stir to coat. Let them cook for another 2 minutes until nicely caramelized. Remove from heat and set aside.
Step 2: Make the Chicken Mixture
In a large bowl, combine the ground chicken, egg, breadcrumbs, parsley, garlic, salt, and pepper.
Add the caramelized onions and mix until everything is fully combined. If the mixture feels too sticky, add a little more breadcrumbs.
Step 3: Bake Instead of Pan Fry
Preheat your oven to 375°F.
Transfer the chicken mixture onto a lined baking sheet and press it into an even layer.
Bake for about 20 to 25 minutes, or until fully cooked through.
Step 4: Break Apart and Add Toppings
Remove the baking sheet from the oven and gently break the chicken mixture into pieces using a spatula.
Spread it out evenly, then top with the cheddar cheese pieces and cooked bacon.
Return to the oven for 3 to 5 minutes, just until the cheese is melted.
Step 5: Assemble the Sliders
Slice your rolls in half, keeping them connected if possible.
Scoop the cheesy chicken mixture onto the bottom half of the rolls. Layer the sliced avocado on top.
Place the top buns over everything.
Step 6: Final Warm-Up
For the best texture, place the assembled sliders back into the oven for another 3 to 5 minutes until warmed through.
Slice and serve.
Notes
- Baking the chicken mixture makes this so much easier, especially when cooking for a group
- The caramelized onions add so much flavor, do not skip that step
- Keeping the rolls connected makes assembling and serving way easier
- These are best served warm, but leftovers reheat really well
What Makes These California Avocado Chicken Sliders a Repeat Recipe
I think the reason this recipe stays in my rotation is because it is so adaptable. Sometimes I make them exactly as written, and other times I switch things up depending on what I already have in the fridge.
A few ways I have changed them over time:
- Using rotisserie chicken for a faster dinner
- Adding extra avocado because honestly there is never enough
- Serving them with sweet potato fries
- Using Hawaiian rolls for a slightly sweeter slider
- Adding a little chipotle mayo for extra flavor
They always turn out good.

My Favorite Way to Serve Them
These sliders are best served warm right after baking. I usually pair them with something simple because the sliders already have so much flavor.
Some easy side ideas:
- Pasta salad
- Air fryer fries
- Caesar salad
- Watermelon in the summer
- Chips and dip for parties
They also reheat surprisingly well the next day.
A Crowd Pleaser Every Time
I feel like everyone needs a handful of recipes they can rely on when they do not know what to make, and this is absolutely one of mine. It is comforting without being too heavy, easy without being boring, and one of those meals that disappears fast.
If you are looking for a recipe that works for both busy family dinners and feeding a crowd, these California avocado chicken sliders are worth adding to your list.
